Cut Delicata squash in lengths of about 2.5 inches.
spoon out seeds and roast on the same pan…yummm
Place on baking sheet (standing up) and stuff with whole shallots until full. Sprinkle some sesame oil and a pinch of salt on each one.
Bake for 30 -40 min till browned on bottom and semi soft.
Braise some favorite greens (I used spinach and mustard) for a couple of minutes with a dash of balsamic vinegar and fresh ground pepper and to finish.
Plate and top off each squash with enough greens mix to pop out of the top!
Devine as is or top with a crumbly feta or chevre with the tiniest pinch of nutmeg!
