This tea cake is easy to make with several herbal delights. Try Lavender for an aromatic treat, Chamomile or Rose petals for a sweet undertone or Rosemary for a subtle savory bite, ginger for spice or just lemon. All equally delicious, all worth making to try each one!
Makes a two pound loaf cake or six 2oz shaped cakes. Preheat oven to 325 degrees. Bake 45 min
11/2 c flour(s) of choice (choose “soft” GF flours)
2t Baking powder
1 c sugar or 3/4 c agave syrup
1/2 c heavy cream or yogurt (or vegan sub)
grated zest of 2 lemons
4 T lemon juice
6 T butter (or substitute) melted
1/2 cup powdered sugar
2t lemon juice, hydrosol etc…
Lightly beat eggs and sugar, add cream, lemon zest and juice. Sift flour and b soda and fold in, carefully add melted butter and mix gently. Pour batter into greased and floured pan(s). Bake 45min or until skewer comes out clean. Cool about 10 min. Remove from pan(s) let cool further. Brush on icing.. Sure to be a favorite in your home!!
